RECIPE ALERT - Adie's Lentil Salad

I didn't know what the hell a lentil was until about two years ago. That is a bit odd considering that it was one of the first crops domesticated in the history of the world. Nowadays, it is a staple of my diet! Lentil soup, lentil salad... whatever! It's all good. This is another very diverse recipe that you can tweak to your vegetable preferences (add green/red peppers, etc).

Adie’s Lentil Salad

INGREDIENTS
1 lb green lentils
¾ cup olive oil
¼ balsamic vinegar
3 green onions (minced)
1 clove garlic (minced)
3 T chopped parsley
2 T dijon mustard
3-4 tomatoes

DIRECTIONS
1.       Chop and combine all ingredients.
2.       Refrigerate and let marinate for 6 hours before serving.

NOTES
1.       I probably use more of a 1:1 olive oil to balsamic vinegar ratio to keep the texture less oily.
2.       This goes well with pretty much anything, especially anything that comes off your grill.
